Many of us are harvesting the immature flower heads on our garlic plants (scapes). So what is your favourite way to use them? This pesto is delicious, versatile and fabulous with pasta.
8 garlic scapes
2 cups of fresh spinach
1/2 cup of fresh parsley
1/2 cup of fresh basil
3/4 cup of grated parmesan cheese
1/2 cup of pine nuts
1 cup of olive oil
Place all the ingredients except the oil into a food processor. Set on a low speed and start to process, add the oil slowly until it is all combined. This mixture will store in a sealed container in the fridge for a few days.
